Achi Powder – Nigerian Soup Thickener for Ofe Achi

Achi

Ground achi seed, the thickener that holds an Igbo soup together without taking over the flavour. Where egusi brings its own taste and ogbono brings the draw, achi mostly gets out of the way and just does the job.

How to use it

1. Let your soup come to a proper boil first. Meat, stock, palm oil, seasoning, all in.
2. Sprinkle, do not dump. Take small pinches and scatter them across the surface while stirring. Tipping it in all at once gives you lumps you will never get out.
3. Stir and let it cook for five to ten minutes so the raw taste goes.
4. Judge as you go. It thickens more as it sits, so stop slightly short of where you want it.

What it is used in

• Ofe achi, with cocoyam or on its own
• Oha and nsala, where you want body without a competing flavour
• Anywhere you would otherwise reach for ofor or cocoyam paste

Roughly how much

About two tablespoons will thicken a medium pot. Add half, wait, then decide.
