Prekese
Long, dark, ridged pods that perfume a whole pot from one piece. Prekese in Ghana, aidan fruit in Nigeria, uhio or oshosho in parts of Igbo land. Ghanaian and Nigerian kitchens both reach for it, which is rarer than you would think.
You will smell it before you taste it. That is the point of it.
How to use it
- Rinse the pod under running water. They come from a tree, so wash properly.
- Crack or break it into two or three pieces so the aroma can get out. A whole uncracked pod does very little.
- Drop it into the pot at the start of cooking and let it simmer with everything else.
- Take it out before serving. It is an aromatic, not something you eat. Nobody wants to bite a pod.

Aroma and taste
Sweet, resinous and faintly medicinal, with a molasses edge. One pod is usually enough for a family-sized pot. Two is a lot.
