The spice blend for masala chai. Cardamom, ginger, cinnamon, clove and black pepper, ground and ready.

How to make masala chai

1. Bring water to the boil with a teaspoon of chai masala and let it simmer two minutes.
2. Add black tea leaves and simmer another two minutes.
3. Add milk and bring back to a boil. Let it rise and pull it off, twice. That is the whole technique.
4. Sweeten and strain.
