Whole dried cloves. Kanafuru in Yoruba. Intensely aromatic, and one of the few spices where three or four pieces genuinely change a whole pot.

How to use it

• Zobo. Steeped with the hibiscus, ginger and pineapple skin. Close to compulsory.
• Pepper soup and stock. A few whole cloves early in the cook.
• Tea and chai. Simmered with ginger and cardamom.
• Rice and curry. Whole, and fished out before serving.
• Baking. Ground, in cakes and spiced buns.

Go carefully

Cloves are powerful and numbing in quantity. Three or four for a pot, not a handful.
