Curry masala or curry powder

Nigerian curry powder is bright, yellow and mostly turmeric-led. It is what goes in jollof and fried rice. Curry masala is darker and more aromatic, and it belongs in a curry. Using one where the other should be is why a dish sometimes tastes almost right.

How to use it

1. Bloom in hot oil for thirty seconds before the onions go in.
2. Add meat or vegetables, then tomato and stock.
3. Simmer gently. Masala needs time to settle.
