De Rica Tomato Paste
The small sachets that have been the base of Nigerian stew for as long as most people can remember. Double concentrate, deep red, and considerably thicker than the tomato paste sold in American supermarkets.
Why sachets
One sachet is roughly one pot of stew. No half-used tin going furry at the back of the fridge, and the roll of five lives happily in a cupboard.
How to use it
- Blend your fresh tomatoes, tatashe and pepper, then boil the mixture down to reduce the water.
- Fry the paste in hot oil before anything else goes in. Three to five minutes, stirring, until it darkens from bright red to deep brick and the oil separates.
- This step is the whole difference between stew that tastes sharp and stew that tastes cooked. Skipping it is the most common mistake.
- Then add your blended pepper base, stock and seasoning.
