Tatashe
Dried red bell pepper, the mild half of the Nigerian pepper trio. Tatashe is the sweet one, ata rodo is the hot one, ata gigun is the long red one. Almost every stew uses some combination of all three.
Tatashe brings colour and body without heat. It is what makes jollof red rather than orange, and what stops a stew being nothing but fire.
Why dried
Fresh tatashe is hard to find outside a proper African market, and the bell peppers in an American supermarket are not the same variety. Dried gives you the actual flavour and colour, keeps for months, and needs no blending.
How to use it
- In stew and jollof. Add straight to the pepper base. It thickens slightly as well as colouring.
- Rehydrated. Soak in warm water for twenty minutes and blend with fresh pepper and onion for a closer-to-fresh base.
- As a dry rub on grilled meat and fish, for colour without heat.
How much
Two to three tablespoons for a medium pot of stew. Since it is not hot you can be generous, which is the point of it.
