An all-purpose rub for anything that goes over fire. Savoury, smoky and mildly peppery.

How to use it

1. Pat the meat dry, then rub with a little oil.
2. Coat generously and rest for at least thirty minutes.
3. Grill hot, and dust again as it comes off.

Good on beef, chicken, lamb, fish, corn, plantain and vegetables.
