The Caribbean curry blend. Heavier on turmeric and allspice than Indian curry powder, which is what gives Jamaican curry goat and curry chicken their particular colour and warmth.

How to use it

1. Season the meat with it and leave overnight if you can.
2. Burn the curry. Fry the powder in hot oil for a minute before the meat goes in. This is the step Caribbean cooks insist on.
3. Brown the meat, add stock and scotch bonnet, and stew slowly.
