The Caribbean blend for oxtail. Allspice, thyme, garlic and pepper, built for meat that needs three hours and rewards patience.

How to use it

1. Season the oxtail heavily and leave overnight if you can.
2. Brown it hard in a hot pot. Colour is flavour here.
3. Add stock, scotch bonnet, thyme and butter beans.
4. Simmer or pressure-cook until it falls off the bone. Undercooked oxtail is not worth eating.

Also good on

Beef short rib, goat, lamb shank and stewed chicken.
