A savoury blend for pork. Sage, garlic, onion and pepper, balanced to suit meat that dries out easily.

How to use it

1. Pat the chops dry and rub with a little oil.
2. Season both sides generously and rest for twenty minutes.
3. Sear hard, then finish on lower heat.
4. Do not overcook pork chops. A little pink in the middle is correct and rested meat carries on cooking.

Also good on

Pork belly, ribs, sausages, roast potatoes and apple-based sides.
