Raw, unfiltered buckwheat honey. Dark, almost molasses-coloured, and far more assertive than the pale clover honey most people are used to.

What it tastes like

Malty, earthy and rich, with a lingering finish. If regular honey tastes like sugar, this tastes like something that came out of the ground.

How it gets used

• In tea, particularly with ginger and lemon.
• Drizzled over pap, custard or yoghurt.
• With bitter kola, which is how most people introduce a beginner to it.
• In marinades and glazes for grilled meat.
• Straight off a spoon.

It will crystallise

Raw honey sets solid over time. That is a sign it has not been processed. Stand the jar in warm water and it liquefies again.
