Golden Penny Semovita. The yellow and green pack, and for a great many Nigerian households the default swallow because it is quick, smooth and hard to ruin.

How to make it

1. Boil water and lower the heat.
2. Sprinkle the semovita in gradually while turning hard with a wooden spoon.
3. Keep turning until it thickens and comes away from the sides.
4. Splash in a little hot water, cover, steam two minutes.
5. Turn again until smooth and shape with a wet spoon.

Semovita or semolina

Semovita is a blend, softer and slightly more elastic. Plain semolina is coarser and firmer. People are loyal to one or the other and can taste the difference immediately.
