Steak Seasoning

Coarse dry rub for steak. Cracked pepper, garlic, onion and salt, ground large enough to form a crust.

How to use it

1. Take the steak out of the fridge thirty minutes before cooking.
2. Pat it completely dry. Wet meat steams instead of searing.
3. Oil lightly, then coat generously on both sides.
4. Sear in a very hot pan or over direct heat.
5. Rest it for five minutes before cutting. Non-negotiable.

Also good on

Burgers, lamb chops, roast potatoes, mushrooms and grilled corn.
